Who's Cooking What?

Everyone is expected to help on at least one meal. Captains, do not hesitate to ask for more help as needed.

Everyone is expected to help on at least one meal. 
Captains, do not hesitate to ask for more help as needed.  Men and all teenagers will also be expected to help in meal preparation as well as clean-up.

Just a few hints/reminders:

  • Thurs Breakfast – no cooking necessary!  We are all going to eat a big meal at lunch and there are just a few of us on cooking detail so let’s just put out bagels, fruit, toast and jams!  That way there is no cleanup to speak of and the lunch crew can immediately get started!
  • Thurs Leftovers – Don’t forget bread, condiments and extra food.  Because of the large number of people and the limited amount of cooking space, Thurs Lunch cannot be counted on for a certain amount of leftovers, but will definitely factor in for leftovers!  So bring extra lunch meat, peanut butter, etc. You may also want to coordinate condiments, chips, etc. with Friday Lunch crew!!
  • Friday Lunch – You may want to coordinate with Wed Chili crew to see if there will be much leftover and plan from there for chili dogs.  Also, you may want to coordinate condiments, chips, etc. with Thurs Dinner Leftover crew

Twenty lbs seasoned meat
Beans

Four packages crackers (2 Ritz, 2 Saltines)
Six 14 ½ oz bags Fritos
Two 32 oz bags grated cheese
Four 24 oz bottles veggie dip
Three 3 lb bags carrots
Broccoli

Four bunches green onions

BREAKFAST IDEAS and Amounts

Pancakes, Breakfast
Recipe for Approx 85
80 oz box of Bisquick (140 pancakes)
15 eggs
10 lbs. bacon (used 8)
Two 4 lb. packages of cocktail sausages
Large can peaches
One package chocolate chips
Three 27 oz bottles of syrup
One bottle blueberry syrup (used ½)
One & ½ gallons milk
Two 96 oz bottles orange juice
Two gallons apple juice (used 1)
Large tub butter (used less than 1/3)

Breakfast Tacos
Recipe for Approx 85
Two gallons orange juice
One gallon apple juice
One & a half gallons V-8 juice
95 eggs
Ten lbs bacon
Three lbs sausage
96 tortillas
One loaf bread
Two & ½ lbs cheese
One large bottle Pace
One small jelly – strawberry
Two lbs butter
Note: bring skillet

LUNCH IDEAS and Amounts

Hot Dog Friday Lunch
Recipe for Approx 95, assuming 25% kids

132 hot dogs – Tracey averages 1.5 hot dogs per adult and 1 hot dog per 1.5 kids – we used almost all of them
4 lbs grated cheese – We only used 2 lbs
5 lbs carrots – Used all of them
4 jars (10 oz) relish – Used 2 of the jars
132 buns – Used almost all of them
60 oz mayo – never even opened it because there was another jar unused from leftover night
24 oz mustard – Used some of it
4 lbs ketchup – Used some of it
Chili – used the leftover chili all up. Opened a Wolf chili, but didn’t use most of it
25 oz diced onions – Used about 2/3 of it
3 veggie dip containers – Used 2 containers
5 big bags potato chips – Used 3
3 big bags Fritos – I think we used 1 bag

THANKSGIVING DINNER

Thanksgiving Dinner Meat
For 75 – 90

Two Baked Turkeys           18 – 22 lbs each
One Smoked Turkey          18 – 22 lbs each
3 10 lbs Ham
For 100 and then some I added one more turkey and one more ham

Thanksgiving Sweet Potatoes
For 75 – 90
16 lbs of Real Sweet Potatoes
3 cups of butter
4 – 6 cups of brown sugar
½ gallon milk or two cups of ½ and ½
Cinnamon to taste
Bag of mini marshmallows

Spit these ingredients in half and put each half into a aluminum turkey pan!
This will make two Turkey Pans of potatoes
These can be made ahead of time and frozen. Then heat and add marshmallows on Thanksgiving Day!

Thanksgiving Dinner Dressing
For 75 – 90
PER aluminum Turkey Pan
Five packages of Cornbread – cooked and crumbles
One Bag of seasoned stuffing mix
Onions – 2 – 3 per tine
Celery – one and ½ bunch
I sauté the onions and celery before hand and freeze. I also cook the cornbread and mix with stuffing. You can let this sit a day or two out.
On Thanksgiving Day….
MixTogether and pour into cornbread filled tins
Approx 6 eggs, salt and pepper each tin
Then you will add 6 – 10 cans of chicken broth to each tin to make thick soup. Then cook!!

Thanksgiving Dinner Fruit Salad
For 65
12 large oranges
12 large bananas
Five pounds of apples
One 20 oz and One 16 oz can of peaches
One 20 oz and One 16 oz cans of Pineapple chunks
Two cups chopped pecans
One large bottle of cherries
One Bottle of Poppyseed dressing – to taste.

Thanksgiving Dinner –  Extras
1 ½ roll per person
Two cans of jellied cranberry
Two cans of Whole Cranberry
I have never altered the amount of cranberry I buy regardless of people and we have never had a problem
